This is in response to the erroneous article This
Train Dont go to Paradise [JACK volume 1 issue #2].
I am a fan of Gonzo Journalism, and every writer is entitled to
their opinion, but for god sakes stick to the facts Jack!
Five of the eight paragraph article (not review) dealt with non
Gravy Train issues. Hmm, bad bread eh? It is a chip truck. The artisan
bakeries in this patch are great, but the breads shelf life
is not. Bad frites eh? Try eating them before taking them away.
Oh JACK, perhaps your tongue is not as savvy as your pen.

Buckes Gravy
5 lbs veal or beef bones neck and back
1 cup carrots 1" mirepoix
3 cups leeks 1" mirepoix
1/2 cup celery 1" mirepoix
1 ounce parsley sprigs
1 ounce thyme sprigs
1 unpeeled head of garlic, crushed
Roast everything in a pan at 350° fahrenheit for 2 to
3 hours. Add water if necessary. Place all in a large stock
pot, reserving one neck bone. Fill pot with water, and add
1 pound of tomato paste. Bring to a boil, then simmer for
5 to 10 hours. Enjoy the succulent marrow on toast. The stock
will likely not thicken if beef bones are used: add a roux.
